Pathar Kebab is a delectable appetizer that holds its origin from Hyderabad, India. The lamb muscle meat is marinated for about 4 hours & then cooked on a sizzling pizza stone (Pathar), just as the name suggests.
The credit for the invention of this exclusive lamb kebab marinade recipe goes to the chef of a Hyderabadi Nizam. The Nizam would ask his chef to come up with delicious kebabs during hunt in the woods. To satisfy Nizam’s insatiable thirst for delish kebabs, chef burnt some coals, placed a flat stone over it &then cooked kebabs.
Soon this lamb kebab recipe gained popularity in Hyderabad & today it is savored across the world with delight. In United States, Pathar kebab recipe can be easily prepared over pre-heated pizza stones in an oven.

- 900 Gram(s) Lamb Whole Muscle Meat Cut as 2"x 3", about 3/4" thick
- 6 Serrano Small Green Chilies
- 1 Teaspoon Ground Cinnamon
- 1 Teaspoon Ground Black Pepper
- 1 Teaspoon Finely Chopped Ginger
- 1 Teaspoon Minced Garlic
- 1/2 Teaspoon Skin of Green Raw Papaya Finely Chopped
- 1 Tablespoon Ghee

- Combine all the ingredients given under the “for Marination” head except lamb in a food processor. Process the ingredients to make a smooth paste
- Rub the paste on the lamb pieces. Take a fork & poke tines to make 10 holes in each piece. Rub the paste on pieces again & let it rest for 4 hours at room temperature.
- Put Pizza Stone in the middle rack of the oven.
- Turn on the Oven to 450ºF Temperature. Wait for around 50 minutes until the stone is hot.
- Baste each kebab with Ghee on both sides & place it on the pizza stone. Let it cook on for 5 minutes on each side.
- Delicious Pathar Kebabs are ready. Serve hot with onion rings & green chutney.
