Easy Tiffin Recipe | Corn Paneer Masala Rice Dish

  1. Keep Your Ingredients Ready.
  2. Make sure your spices are ready too.
  3. Heat butter in a pan.
  4. Add Cumin seed to butter and let the cumin seeds crackle.
  5. Add chopped garlic and chopped green chili in butter and saute for a good garlic aroma.
  6. Then add onions and saute for about 2 minutes on low flame till they become soft.
  7. Once the onions are done, add all the spices except dry mint leaves.
  8. Mix spices well and add some water to prevent spices from burning & to ensure that spices are cooked well.
  9. Now add Corn and mix well.
  10. Then add Cottage Cheese / Paneer Cubes. Give it a good mix and cover the pan & cook on low flame for about two minutes.
  11. After this add Boiled Rice, give it a good mix. You can also use leftover rice.
  12. Sprinkle some dry mint leaves powder on rice and cover the lid again for about 2 minutes and let it cook on low flame.
  13. Remove the lid. Our Corn Paneer Masala Rice is ready to serve. Serve hot with Raita, Pickle and Papad.
